Blue Carbon Steel

Blue Carbon Steel is a type of cooking material that combines the best qualities of Stainless Steel and Cast Iron. It's nearly half the weight of Cast Iron while providing all of its non stick properties, and has the heat control and heat retention of Stainless Steel.

The Satake frying pan is made of light weight carbon steel with a hammered surface to spread the heat efficiently and evenly and reduce hot spots. It has a versatile design and is perfect for all kinds of frying, fish, meat and vegetables. As the frying pan is thinner and much lighter than cast iron, it's easier to maneuver on the stove and has a comfortable handle in stainless steel with a hole at the top for easy hanging. This item is suitable for all types of hobs, including induction and in the oven. The pan is pre-treated and does not need to be seasoned (burned in.) 

The pan can withstand oven temperatures of up to 250° / 480°F and has equivalent properties to cast iron, but with the advantage of lower weight.  As it is thinner, the carbon steel can move during heating and cooling, therefore it is natural and normal for the pans to warp a little. It does not affect the good qualities or cooking ability of the pan. However; to reduce the warping effect, turn heat up slowly and use a hob close to the size of the pan bottom. 

Satake Carbon steel pans are pre-seasoned and ready for use after a first wash; boil water in the pan for a few minutes. Clean the pan with a sponge and a small amount of detergent. Rinse and dry well. The pans natural nonstick function gets better and better the more you use the pan.

Carbon steel is sensitive to moist, never leave the pan in water.   Hand wash and rinse the pan in warm water.

Hand dry thoroughly immediately after washing. The bottom of the pan will become colored and slightly patchy, which is normal.

Steep and rapidly increased temperature changes can cause an uneven bottom. Therefore, heat the pan gradually to your desired temperature.

After use - allow the pan to cool before cleaning. Cooking with acidic food will downgrade the natural patina layer and is not recommended.

Never pour cold water into a hot pan.

When using induction stove top, never use the boost effect, the heat increase is too intense for the carbon steel.  This function is for boiling water only.

The carbon steel pan must not be washed in the dishwasher.

Cleaning is done in warm water and detergent should be avoided as much as possible. If you need to wash the pan thoroughly with hand detergent, it is good to season the pan in fat afterwards.

Lubricate the pan with a thin layer of canola- or flaxseed oil and heat gradually to steaming hot.  Allow to cool and then dry with kitchen paper. The pan is not damaged by this, and the process can be done repeatedly if the natural nonstick function is washed away.

Scratches and color changes do not affect the performance of the frying pan.
